Here is a simple paleo breakfast (or snack) food that I love to cook. I got this recipe ages ago from Mark’s Daily Apple. I cooked this a few times in the Philippines (as bananas were plentiful) and it was always a hit (with Tim & I).

You can adapt it to your taste, here I used macadamia nut butter, mainly because it was in the pantry. As for flavours, instead of strawberries, you can use  berries, coconut flakes and anything else you like. I also realised I used two eggs instead of one, I’m not really sure why, just forgot, but it still worked 🙂

Step 1 – What you need

  • 2x eggs
  • 2x super ripe bananas
  • A handful strawberries (or blue berries or coconut flakes, whatever you want)
  • A spoonful of macadamia nut butter (or almond butter)
  • Enough coconut oil to cook your pancakes

Step 2 – What to prepare

  1. Slice the strawberries
  2. Smoosh the bananas
  3. Beat the eggs
  4. Plop in some nut better
  5. Mix well

Step 3 – What to do

  1. Oil the pan
  2. Plop a spoonful of the mixture in the pan
  3. Listen for the sizzles
  4. Flip when you think it’s ready
