Here is a simple paleo breakfast (or snack) food that I love to cook. I got this recipe ages ago from Mark’s Daily Apple. I cooked this a few times in the Philippines (as bananas were plentiful) and it was always a hit (with Tim & I).
You can adapt it to your taste, here I used macadamia nut butter, mainly because it was in the pantry. As for flavours, instead of strawberries, you can use berries, coconut flakes and anything else you like. I also realised I used two eggs instead of one, I’m not really sure why, just forgot, but it still worked 🙂
Step 1 – What you need
- 2x eggs
- 2x super ripe bananas
- A handful strawberries (or blue berries or coconut flakes, whatever you want)
- A spoonful of macadamia nut butter (or almond butter)
- Enough coconut oil to cook your pancakes
Step 2 – What to prepare
- Slice the strawberries
- Smoosh the bananas
- Beat the eggs
- Plop in some nut better
- Mix well
Step 3 – What to do
- Oil the pan
- Plop a spoonful of the mixture in the pan
- Listen for the sizzles
- Flip when you think it’s ready
